Many things (both good and less good) have happened in my life lately, so in November 2013 I decided to take a break from the "Corporate world" to sort out my life situation. One of many things that I decided to do was to learn more about cooking, because food has always been a passion of mine. From my native Vietnam to my home country Norway, my life journey has taken me to many beautiful countries such as Denmark, France, Germany, Italy, Australia, Malaysia, where I truly got exposed to the food culture, which may reflect in my home-cooked dishes. With this site, I hope to inspire and encourage you to take a break (short, long, or very long - you decide) and do what you love doing but that you haven't set a date for. Chili con carne with dark chocolate chips :)

So what's cooking in Maison Emil's kitchen today?

Went to the butcher for some minced beef as MEP wanted to cook chili con carne today. And because chili and chocolate fit well together, why not use dark chocolate instead of sugar for a richer taste?


Chili con carne with dark chocolate chips

Ingredients: shallot onion, chili powder, coriander, red beans, bay leaves, bell peppers, minced beef (75%) and porc (25%), paprika powder, cumin powder, pepper, tomato juice, salt, tomato puree, garlic, beef stock, and dark chocolate chips from Costa Rica (67%).
Duration: approx. 1h of stew/simmering time

As usual, I don't follow any recipe when I cook, so unfortunately I don't have a recipe with exact measurements to share, but I will from now on write down my measurements so that I can share and re-cook using my recipe :)

Result: A thick, tender, rich and juicy chili con carne.

Somebody's tummy is getting very happy :)
